Spring is in the air, meaning it's time to start bringing color back into everything! Wardrobe, makeup, food - all of it is starting to get accents of the vivid colors I missed so much during Winter. When I found this recipe for Veggie Bars, I immediately thought "This looks like Spring in bite form!"
I love plates filled with food of varying colors (Much more appetizing than food that's all the same color) and shapes, so this hit all the marks for things I want to make (including the fact that the bottom layer is made of crescent rolls...totally my weakness).
This recipe essentially looks like a pizza (crust, sauce of sorts, toppings), and was about as easy to make too. It's as simple as make the crescent rolls flat on a baking sheet, mixing mayo and cream-cheese with some spices and spreading that on the cooling crust, and finished by topping with whatever veggies you'd like. For mine, I made some variations - I don't eat cheese, so I used a vegan cream-cheese and egg-less mayo instead.
I don't know if it was the flavor/consistency difference between dairy-free cream cheese and regular cream cheese, or that the entire mixture seemed like too much, but I wasn't as "wowed" by the recipe as I thought I'd be.
Perhaps if it was a very small amount spread thinly across the top it would be better, but following the measurements in the recipe, I felt like there was way too much mixture, and not enough crust/veggies to balance it out.
I also assume that these would be better cut into small pieces and served as appetizers versus eating a giant square in the same fashion as a pizza slice...(oops). Not a bad recipe, but not one of my favorites. Perhaps I'll revisit the idea in the future using a different "sauce" layer and see how I like it...
